It started as a food truck for Waffle Bus owner Phi Nguyen. It was 2010 when he was out of work and decided to follow his dream of opening a restaurant. Starting with a food truck seemed like the best way for the entrepreneur. Why waffles?  Nguyen recognized there were tons of taco trucks and he wanted to create something different. Knowing that chicken and waffles are a staple in the south, he sought to bring that homestyle goodness all around Houston. The best part for Bridgeland residents is that we will soon have our own brick and mortar Waffle Bus location, right here in Lakeland Village Center!

Other locations in the Houston area include a store on North Shepherd Drive, which opened in 2019 and another on West Alabama Street. Looking to expand to a location outside of the city, he knew Bridgeland would be a great location  to open as the Waffle Bus food truck has been at many Friday Night Bites. “The community is beautiful, and I’m excited to bring the Waffle Bus to Bridgeland to bring something new to the area.” said Nguyen. He’s also opening a location in Derby, Kansas because his partner also wanted one for his city.

The Waffle Bus draws crowds all around Houston. His waffles are amazing: light and fluffy on the inside and crispy on the outside. He tested over 100 recipes to create the perfect waffle that you’ll soon be able to get in Bridgeland. Nguyen grinds his own flour, so you can’t get this perfect waffle anywhere else. It’s this proprietary recipe that keeps customers coming back for more.

The mouth-watering menu includes classics such as a Buttermilk Fried Chicken and Waffle Sandwich with their special sauce or a cheeseburger made with angus beef on a brioche bun. Spice things up with a MacDaddy Hot Chicken Sandwich made with spicey buttermilk fried chicken, white cheddar mac & cheese and topped with their famous thunder sauce. Not hot enough for ya? A few of their offerings are listed with a 7/10 spice level. If you can take it, they can dish it out. Add seasoned waffle fries and house made coleslaw to any meal for a satisfying, just-like-mama-makes meal.

Another unique item on their menu of their own creation is the Chicken FrydersTM. It’s Nguyen’s take on a slider, except he places fried chicken between two waffle fries. It’s one of his best sellers. He’s even trademarked the name.

How about a sweet waffle sandwich? The Strawberry Irish Crème Brulee is a sweet-tooth’s dream come true. A rich custard is topped with caramelized sugar, sliced strawberries, and finished with powdered sugar. Milk and cereal ice cream flavors include Saturday morning favorites such as Cinnamon Toast Crunch, Fruity Pebbles, Oreos and Reese’s Puffs.

His crew has come up with a favorite slogan: ‘Every day and waffle it.’ If after reading this you wake up dreaming of waffles, you’ll soon be able to stop by on your way into work — or any day of the week — to pick up a breakfast sandwich prepared on a waffle, brioche bun or biscuit.
